n 1999 the winery was established for the purpose of producing high quality wines made from grapes grown at Sde-Boker.
We started production in August of 1999 with one ton of Merlot. After crushing the grapes were placed in small open topped containers for fermentation, which continued for 10 days.
After fermentation was completed the grapes were pressed in a basket press. The wine settled for a few days and was then pumped into oak barrels to age for the next year.
In September we received one ton of Cabernet Sauvignon, which received the same treatment as the Merlot.
In 2000 approximately 1500 liters of Cabernet Sauvignon and 1300 liters of Merlot were produced. The wine from 2000 was bottled in August 2002 was released in the beginning of 2003.
In 2001 only 1500 liters of Cabernet Sauvignon were produced. The yields were lower than expected and the quality of the Cabernet Sauvignon was higher than the Merlot. The wine was bottled August 2003 and was released sseven months later. In 2002 both Cabernet Sauvignon and Merlot were produced. The wines from 2002 are still aging in barrels.
The 2003 harvest started on 15 August with the Merlot from the older section. Production continued in September with the Cabernet Sauvignon and for the first time Zinfandel and Carignan. The Carignan was half a year in barrels before being bottled and is the first "young" wine produced by the winery. The Zinfandel is expected to be bottled in August of 2004 and will be available by the end of the year.
